Recipe: Prosciutto Omelet w/ Rosemary-Tomato Salsa

I’m guessing that those of you with M-F jobs might haphazardly scramble some eggs while you’re looking for your keys and running out the door. Going Paleo/Primal was probably scary for breakfast, because without the ol’ standby of dry, cardboard flakes in a bowl, anything else tests your ability to show up to work on time. Well, if you can give me about 1 3/4 more minutes in the morning, I promise you can have a delicious breakfast that will break the egg monotony. Or save it for Sunday brunch.

This is a simple preparation, but the flavors are super cuddly with each other. If you don’t have at least one rosemary bush in your yard, might I suggest planting one? My understanding is they’ll grow almost anywhere and you can have that fresh, piney flavor all year round.

Prosciutto Omelet w/ Rosemary-Tomato Salsa

(Amounts are per omelet)

3 eggs

dollop of milk or cream (optional)

salt and pepper, to taste

1 Tbsp. pastured butter

2 slices prosciutto or ham

1/4 cup provolone, shredded (optional)

1/2 cup cherry tomatoes, halved

1 Tbsp. olive oil

1 tsp. rosemary, chopped fine

salt and pepper, to taste

1) Make salsa by adding tomatoes, olive oil, rosemary, and S&P to a small bowl. Set aside.

2) Begin heating up your omelet pan over medium heat. In another bowl, whisk eggs with milk or cream (if using) and S&P.

3) When pan is heated, add butter. Add eggs to pan evenly. As eggs begin to cook, pull egg from the edges of pan to the center with your spatula, which will create a mound in the center and allow the runny egg to rush into the space. Continue doing this until there isn’t enough runny egg to rush into the spaces anymore. Then, on one side of the omelet, add the prosciutto and cheese (if using). Fold other half over the additions and put a lid on the pan. Let cook for 1-2 minutes, then turn off heat and let it sit for another minute to fully cook the insides.

4) Ease omelet onto a plate and top with salsa.

Serves 1.
