Recipe: Power Scramble

Here’s a good one for a pre-exercise morning. Pre-hike. Pre-ski. Pre-long-day-of-work. Pre-shopping. Pre-trapeze-class. Pre-whatever-marathon-you’re-running-that-day. Not so good if you’re pre-sick of eggs. But I digress. Something about the bacon, onion, and sweet potato’s communion here is sublime.

Power Scramble

It ain't pretty, but it sure is tasty.

4 pieces bacon, diced

1/2 onion, sliced

1/2 sweet potato, grated

4 eggs

splash of heavy cream (optional)

kosher salt and fresh ground pepper, to taste

1) Cook bacon over medium-high heat in large skillet.

2) Meanwhile, whisk eggs, cream (if using), and S & P together in small bowl.

3) When bacon fat begins to render, stir in onion and sweet potato. When bacon is crisp, onions are translucent, and sweet potato is beginning to brown, reduce heat to medium and add whisked eggs evenly. Stir eggs around softly to prevent burning. When eggs are cooked thoroughly on the bottom, flip sections over and continue cooking, about 2 minutes, until done. Serve immediately.

    I make something similar. I try to avoid potatoes but I add julienned zucchinni, or diced eggplant, along with some jalapenos or ancho chiles.
