If you’ve read Michael Pollan’s The Omnivore’s Dilemma or seen the film Food, Inc., then you’re familiar with Joel Salatin and his Polyface Farm. This is a man who does it right. Go here for a great interview on what it means to be humane and eat animals.

What I really loved about this piece is how Salatin talks about his methods as though they are the most natural way of doing things. Probably because they are. But in doing so, without really setting up the Industrialized Food Complex (IFC) as a bad guy, he makes them appear so far away from everything that is good in this world. Everyone, after reading this, should be asking themselves, “Why has it ever been done any other way?”

It’s great to have such a reasonable voice on our side, especially when there are people who wield great power, like Oprah and Martha Stewart, espousing the benefits of a vegan lifestyle. I have no problem with folks who eat vegan as a choice of conscience, but as a choice of health? There’s a lot of misinformation out there.

I hope that as people who eat a lot of meat and eggs, we can vote with our dollars and support farms like Polyface. I know it isn’t always possible for everyone, but the more we can do so, the more the IFC will have to take notice. They won’t listen any other way.
